WHAT I'VE BEEN MAKING IN MAY

Yes, I know it’s June but I couldn’t resist sharing some of these spring-y dishes from May’s line up. Bon appetit!

  • Halloumi with corn, cherry tomatoes, and basil by Melissa Clark from The New York Times. Will be making this one-pan salad all season and summer long. I added grilled chicken and a hearty scoop of Sophia’s Greek Pantry tzatziki.

  • Orange creamsicle chia seed pudding by My Stay At Home Adventure. I made this creamy healthy pudding for breakfast and added the below granola as topping.

  • Homemade chunky healthy granola by Ambitious Kitchen. I added extra nuts and skipped the raisins, and loved the raw dates that add a natural sweetness.

  • Carne asada by Isabel Eats. A bright steak taco dish that paired beautifully with homemade guacamole and salsa.

  • Miso chicken meatballs by Kay Chun from The New York Times. A salty and umami chicken meatball that was delicious with roasted sweet potatoes and greens.

  • Corn pesto by Lidey Heuck from Cooking in Real Life. Instead of basil being front-and-center, sweet corn is the star. Definitely involves a few steps but the result is a sweet and savory summery meal.

  • Tomato rice with crispy cheddar by Priya Krishna and Ritu Krishna from The New York Times. A simple and savory one-pan dish. We added fresh spinach for extra vegetables — definitely a pantry-friendly, weeknight meal.
